- 1 can (14-15 oz) salmon, drained, bones and skin removed (or use cooked fresh salmon)
- 1/2 cup breadcrumbs (plain or seasoned)
- 1/4 cup onion, finely chopped
- 1/4 cup celery, finely chopped (optional, for crunch)
- 2 tablespoons parsley, finely chopped (fresh preferred)
- 2 eggs, lightly beaten
- 1 tablespoon mayonnaise (or sour cream for tang)
- 1 teaspoon Dijon mustard (or regular mustard)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of 1/2 lemon (about 1 tablespoon)

- Prepare the mixture:
- In a medium bowl, add the drained salmon and flake it with a fork.

- Form the patties:
