Ingredients:

Main Casserole:

  • 1½ lbs (680 g) ground beef (80/20 for flavor)
  • 6 medium russet potatoes, peeled and thinly sliced (~1/8-inch thick)
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 tsp paprika
  • ½ tsp dried thyme (optional)
  • 1½ cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • 2 tbsp olive oil or butter (for sautéing)

Cream Sauce:

  • 3 tbsp all-purpose flour
  • 3 tbsp unsalted butter
  • 2 cups whole milk (warm)
  • ½ cup beef broth (optional for extra flavor)
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Salt and pepper to taste

Instructions:

Step 1: Prepare the Meat Filling

  1. In a large skillet, heat 2 tbsp olive oil or butter over medium heat.
  2. Add the diced onion and cook until translucent (about 3–4 minutes).
  3. Stir in the minced garlic and cook for another 30 seconds.
  4. Add the ground beef and cook until browned, breaking it up as it cooks (about 6–8 minutes).
  5. Season with salt, pepper, paprika, and thyme. Drain excess fat if necessary. Set aside.

Step 2: Make the Cream Sauce

  1. In a saucepan, melt 3 tbsp butter over medium heat.
  2. Whisk in 3 tbsp flour to make a roux. Cook for 1–2 minutes to remove raw flour taste.
  3. Slowly whisk in warm milk and beef broth until smooth.
  4. Add garlic powder, onion powder, salt, and pepper.
  5. Stir constantly until the sauce thickens (about 5–7 minutes). Remove from heat.

Step 3: Layer the Casserole

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish.
  3. Layer the casserole as follows:
    • First layer: Half of the sliced potatoes
    • Second layer: Half of the cooked ground beef mixture
    • Third layer: Pour over ⅓ of the cream sauce
    • Fourth layer: Sprinkle ½ cup of shredded cheese
    • Repeat: Remaining potatoes, beef, ⅓ sauce, cheese
    • Top with final ⅓ of sauce and remaining cheese

Step 4: Bake

  1. Cover the casserole tightly with foil.
  2. Bake for 60 minutes.
  3. Remove foil and bake uncovered for an additional 20–25 minutes, or until the top is golden brown and bubbly, and potatoes are fork-tender.
  4. Let it rest for 10 minutes before serving.
