🥩🍝 Introduction:

Few combinations are as satisfying as a tender, juicy steak served alongside a rich, flavorful pasta. This recipe brings the two together in perfect harmony—pan-seared steak cooked to your liking, paired with a creamy garlic parmesan pasta that clings to every bite. Whether you’re a seasoned cook or trying something special, this dish delivers restaurant-quality results right at home.

🍽️ Ingredients:

For the Steak:

  • 2 ribeye or sirloin steaks (1 to 1.5 inches thick)
  • Salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic (smashed)
  • 2 sprigs fresh rosemary or thyme (optional)

For the Garlic Parmesan Pasta:

  • 8 oz fettuccine or linguine
  • 2 tablespoons butter
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese (plus extra for topping)
  • Salt and black pepper to taste
  • Optional: a pinch of red pepper flakes for heat
  • Chopped fresh parsley for garnish

🔪 Instructions & Method:

Step 1: Prep the Steak

  1. Season both sides of the steaks generously with salt and pepper.
  2. Let the steak sit at room temperature for about 30 minutes before cooking for even searing.

Step 2: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add pasta and cook according to package directions until al dente. Reserve ½ cup of pasta water and drain.

Step 3: Pan-Sear the Steak

  1. Heat a cast-iron skillet or heavy pan over high heat. Add olive oil.
  2. When the oil is shimmering, add the steak. Do not move it for 2–3 minutes to get a good sear.
  3. Flip the steak. Add butter, garlic cloves, and herbs to the pan.
  4. Tilt the pan and baste the steak with the melted butter using a spoon.
  5. Cook to your desired doneness (125°F for rare, 135°F for medium-rare, 145°F for medium). Use a meat thermometer for accuracy.
  6. Transfer steak to a plate, tent with foil, and let it rest for 5–10 minutes.

Step 4: Make the Creamy Garlic Parmesan Sauce

  1. In a skillet, melt butter over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant (don’t let it brown).
  3. Pour in the cream and stir. Let it simmer for 3–4 minutes until slightly thickened.
  4. Stir in Parmesan cheese and a pinch of salt and pepper. Add red pepper flakes if using.
  5. Add the cooked pasta to the sauce. Toss well. If too thick, add a splash of the reserved pasta water.

Step 5: Plate and Serve

  1. Slice the rested steak against the grain.
  2. Plate a generous serving of the pasta and top with sliced steak.
  3. Garnish with extra Parmesan and chopped parsley.

Tips for Success:

  • Room temp steak cooks more evenly and sears better.
  • Use freshly grated Parmesan for the best flavor and melting.
  • Don’t overcrowd the pan when searing the steak—do it in batches if needed.
  • Letting the steak rest locks in juices for maximum tenderness.

❤️ Serving Suggestion:

Pair with a glass of red wine (like Cabernet Sauvignon or Malbec), and add a side of garlic bread or roasted vegetables for a complete meal.
