🛒 Ingredients

For the Herbed Turkey:

  • 400g turkey breast slices (thinly sliced or cooked and shredded)
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • Juice of ½ lemon

For the Mezze Board:

  • 2 balls of burrata (at room temperature)
  • 1 cup hummus (classic or roasted red pepper)
  • 1 cup tzatziki
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (sliced into rounds or ribbons)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup Kalamata olives
  • 1/2 cup green olives (stuffed or plain)
  • 1/2 cup marinated artichoke hearts (optional)
  • 1/4 cup crumbled feta cheese
  • 4–6 mini pita breads or flatbreads (warm, cut into wedges)
  • Fresh mint and dill (for garnish)
  • Drizzle of olive oil and balsamic glaze (for finishing)

🍳 Instructions & Method

Step 1: Prepare the Herbed Turkey

  1. In a bowl, combine olive oil, oregano, garlic powder, paprika, salt, pepper, and lemon juice.
  2. Add turkey slices and toss to coat well. Let marinate for 10–15 minutes.
  3. Heat a skillet over medium heat and sear the turkey slices until golden and cooked through (about 3–4 minutes per side depending on thickness).
  4. Remove from heat and let rest. Slice or shred as preferred.

Step 2: Assemble the Board

  1. Start with the burrata – Place the burrata balls slightly off-center on your board or platter. Drizzle with olive oil and a pinch of flaky salt.
  2. Add the dips – Spoon hummus and tzatziki into small bowls and place them around the board.
  3. Arrange the turkey – Fan out the herbed turkey slices next to the burrata or near the bread.
  4. Add the vegetables – Scatter sliced cucumbers, cherry tomatoes, and red onions around the board.
  5. Include briny elements – Place olives and artichokes in small piles or ramekins for clean presentation.
  6. Add cheese & garnish – Sprinkle feta over the vegetables, and tuck in sprigs of mint and dill for freshness.
  7. Finish with breads – Add warm pita or flatbread wedges around the edges.
  8. Final touch – Drizzle a little balsamic glaze over the burrata and cherry tomatoes for extra flavor.

📝 Tips & Variations

  • Substitute turkey with grilled chicken or lamb for variety.
  • Add stuffed grape leaves (dolmas) for extra authenticity.
  • Use gluten-free pita or veggie sticks for a lighter option.
  • Burrata can be replaced with whipped feta or a ball of fresh mozzarella if unavailable.

🍷 Pairing Suggestion

Serve with a chilled glass of crisp white wine (like Sauvignon Blanc or Assyrtiko) or a light rosé. For a non-alcoholic pairing, go with a cucumber-mint sparkling water or a lemonade with a dash of honey and thyme.
