Spinach Ricotta Bites


Introduction

Spinach Ricotta Bites are savory, cheesy morsels that blend the creaminess of ricotta cheese with the earthy freshness of spinach, all tucked into a crispy, golden pastry shell. These are ideal for appetizers, light snacks, or even as part of a brunch spread. Easy to make and even easier to love, they’re a fantastic way to sneak in some greens while keeping things indulgent.


Ingredients

For the Filling:

  • 1 cup fresh spinach (or ½ cup frozen spinach, thawed and drained)
  • 1 cup ricotta cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 1 garlic clove, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp ground nutmeg (optional)
  • Zest of ½ lemon (optional, for freshness)

For the Pastry:

  • 1 sheet puff pastry, thawed
  • 1 egg (for egg wash)
  • Optional: Sesame seeds or poppy seeds for topping

Instructions & Method

Step 1: Prepare the Filling

  1. Cook the Spinach
    If using fresh spinach, sauté in a pan over medium heat until wilted (2-3 minutes), then let it cool and finely chop. If using frozen, make sure it’s thawed and well-drained to remove excess moisture.
  2. Mix the Filling
    In a mixing bowl, combine the chopped spinach, ricotta, Parmesan, minced garlic, egg, salt, pepper, nutmeg (if using), and lemon zest. Mix until well incorporated. Set aside.

Step 2: Prepare the Pastry

  1. Roll Out the Puff Pastry
    On a lightly floured surface, roll out the puff pastry sheet to smooth the creases and slightly thin it out. Cut it into 12 equal squares (about 2.5–3 inches each).
  2. Fill and Fold
    Place a heaping teaspoon of the spinach-ricotta filling into the center of each square.
    Fold each square into a triangle or bring all four corners to the center and pinch together to seal, depending on the shape you prefer.
  3. Egg Wash
    Beat the second egg and brush over the tops of the bites. Optionally, sprinkle with sesame or poppy seeds.

Step 3: Bake

  1. Preheat and Bake
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the bites with some space between each.
    Bake for 15–18 minutes or until golden brown and puffed.
  2. Cool and Serve
    Allow to cool slightly before serving. Best enjoyed warm!

  • Add a pinch of red pepper flakes for a little kick.
  • Substitute ricotta with cottage cheese (well-drained) or cream cheese for a richer filling.
  • Make it mini: Use mini muffin tins and line them with pastry rounds, then fill and bake for bite-sized cups.
