Fluffy Homemade Pancakes


Introduction

There’s nothing quite like waking up to the smell of fresh pancakes sizzling on the griddle. Whether you’re making breakfast for the family or treating yourself to a lazy weekend brunch, these golden, fluffy pancakes are guaranteed to impress. They’re soft on the inside, lightly crisp on the edges, and can be served with anything from maple syrup and butter to berries and whipped cream.


Ingredients (Serves 4–5)

Dry Ingredients:

  • 1½ cups (190g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients:

  • 1¼ cups (300ml) buttermilk (or milk + 1 tsp vinegar as a substitute)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted (plus more for cooking)
  • 1 teaspoon vanilla extract

Optional Add-ins:

  • ½ cup blueberries or chocolate chips
  • Zest of 1 lemon for a citrus twist

Instructions / Method

Step 1: Mix the Dry Ingredients

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Make sure everything is evenly combined.

Step 2: Combine the Wet Ingredients

In a separate medium bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

Step 3: Make the Batter

Pour the wet mixture into the dry ingredients. Stir gently using a spatula or wooden spoon until just combined — it’s okay if there are a few small lumps. Do not overmix, or your pancakes will be tough instead of fluffy.

Step 4: Rest the Batter (Optional but Recommended)

Let the batter rest for 5–10 minutes. This allows the baking powder and soda to activate, giving your pancakes extra lift.

Step 5: Cook the Pancakes

  1. Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
  2. Pour about ¼ cup of batter per pancake onto the pan.
  3. Cook until bubbles form on the surface and the edges look set (about 2–3 minutes).
  4. Flip and cook for another 1–2 minutes until golden brown.

Step 6: Serve and Enjoy

Serve warm with maple syrup, butter, fresh berries, or a dusting of powdered sugar. For an indulgent twist, top with Nutella, caramelized bananas, or whipped cream.


Chef’s Tips

  • Don’t press down on the pancakes while cooking — it deflates them.
  • To keep pancakes warm, place them on a baking sheet in a 200°F (90°C) oven while cooking the rest.
  • For extra fluffiness, separate the egg, beat the white until soft peaks form, and fold it into the batter at the end.
