Baked Lemon Feta Chicken with Garlic Rice

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1 tsp dried oregano
  • ½ tsp dried thyme (or rosemary)

  • 1 ½ cups long-grain white rice (basmati or jasmine work well)
  • 2 tbsp butter or olive oil
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • Salt, to taste
  • 1 tbsp lemon juice (optional, for brightness)

Step 1: Marinate the Chicken

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
  2. Add the chicken breasts and toss to coat evenly.
  3. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.

Step 2: Prepare the Garlic Rice

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, melt butter (or heat olive oil) over medium heat.
  3. Add minced garlic and sauté until fragrant (about 30 seconds—don’t burn it!).
  4. Stir in the rice and toast it lightly for 1–2 minutes.
  5. Pour in chicken broth and a pinch of salt.

Step 3: Bake the Chicken

  3. Bake uncovered for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  4. Sprinkle feta cheese over the chicken and bake for another 5 minutes, just until the feta is warm and slightly golden.

Step 4: Serve

  1. Spoon a bed of fluffy garlic rice onto each plate.
  2. Top with a baked chicken breast and drizzle any pan juices over the top.
  3. Garnish with fresh parsley or dill, a sprinkle of extra lemon zest, and a few feta crumbles.
