Ultimate S’mores Cobbler

Introduction

The Ultimate S’mores Cobbler is a warm, gooey dessert that fuses the nostalgic charm of campfire s’mores with the comforting heartiness of a baked cobbler. Imagine melted chocolate, toasted marshmallows, and buttery graham cracker crumble all layered over a rich chocolate filling — it’s indulgence at its finest. Perfect for family gatherings, holidays, or cozy nights in, this cobbler brings the joy of campfire flavors into your kitchen oven.

History of S’mores Cobbler

The classic s’more dates back to the early 1920s, when it first appeared in a Girl Scouts handbook as “Some More,” referring to how irresistible they were. Over time, bakers began experimenting with the beloved trio — graham crackers, chocolate, and marshmallows — turning it into pies, bars, and eventually cobblers.
The S’mores Cobbler is a modern twist that combines the gooey nature of the original with the rustic, spoonable quality of an American cobbler, which has roots in early colonial baking traditions.

Ingredients

For the Chocolate Filling:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips (optional for extra sweetness)
  • 1/4 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 tsp vanilla extract

For the Graham Cracker Crust:

  • 1 1/2 cups crushed graham crackers
  • 1/4 cup melted butter
  • 2 tbsp brown sugar

For the Topping:

  • 2 cups mini marshmallows
  • 1/2 cup chopped chocolate or additional chocolate chips
  • Crumbled graham crackers for garnish

Method / Instructions

Step 1: Prepare the Oven

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.

Step 2: Make the Graham Cracker Layer

In a small bowl, combine graham cracker crumbs, melted butter, and brown sugar. Press the mixture evenly into the bottom of the prepared dish to form a crust layer. Bake for 5–7 minutes, just until lightly golden.

Step 3: Create the Chocolate Batter

In a large mixing bowl, whisk together flour, cocoa powder, granulated sugar, brown sugar, baking powder, and salt.
Add milk, melted butter, and vanilla, then stir until smooth. Fold in chocolate chips. Pour this mixture over the pre-baked graham crust.

Step 4: Bake the Cobbler

Bake the chocolate layer for 25–30 minutes, until the center is just set but still slightly gooey.

Step 5: Add the S’mores Topping

Remove the dish from the oven and immediately sprinkle mini marshmallows and chocolate chunks on top.
Switch the oven to broil mode and place the cobbler back in for 1–2 minutes, or until the marshmallows are toasted and golden brown (watch closely — they burn quickly!).

Step 6: Serve

Let the cobbler cool slightly for 10 minutes. Serve warm with vanilla ice cream or whipped cream for the ultimate treat.

Formation / Structure

Your S’mores Cobbler should have three beautiful layers:

  1. Bottom: Buttery graham cracker crust that gives a toasty crunch.
  2. Middle: Gooey, molten chocolate cobbler filling.
  3. Top: Golden-brown marshmallow topping with melted chocolate pockets.

When scooped, each spoonful combines all three textures — crispy, creamy, and gooey.
