Cheesy Stuffed Meatballs with Sweet Glaze

Ingredients

For the Meatballs:

  • 1 lb (450 g) ground beef (or half beef, half pork for extra flavor)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 2 tbsp milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chili flakes (optional, for a little heat)
  • 12–15 small mozzarella cubes (or any melty cheese of choice)

For the Sweet Glaze:

  • 1/3 cup ketchup
  • 3 tbsp brown sugar
  • 2 tbsp honey or maple syrup
  • 1 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1/4 tsp garlic powder

Instructions & Method

Step 1: Preheat & Prepare

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking tray with parchment paper or lightly grease it.

Step 2: Make the Meatball Mixture

  1. In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan, onion, garlic, egg, milk, Worcestershire sauce, oregano, salt, pepper, and chili flakes.
  2. Mix gently using your hands or a spatula until everything is just combined — don’t overmix, or the meatballs may turn out tough.

Step 3: Stuff with Cheese

  1. Take about 2 tablespoons of the meat mixture and flatten it slightly in your palm.
  2. Place one cube of cheese in the center, then wrap the meat around it, sealing it completely.
  3. Roll gently into a smooth ball.
  4. Repeat until all the mixture and cheese are used.

Step 4: Bake the Meatballs

  1. Place the meatballs on the prepared baking tray.
  2. Bake for 15–18 minutes, or until browned and cooked through.

  1. While the meatballs bake, combine all glaze ingredients in a small saucepan over medium heat.
