- 2 cups fresh spinach leaves, finely chopped
- ½ cup crumbled feta cheese
- 1 large egg (or 2 egg whites, for lighter version)
- ¼ cup whole wheat breadcrumbs (or almond flour for gluten-free)
- 1 tablespoon olive oil
- 1 garlic clove, minced (optional)
- Salt and black pepper, to taste
- A pinch of chili flakes (optional, for a little heat)
Instructions / Method
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper or lightly grease it with olive oil spray.
Step 2: Prepare the Mixture
In a large mixing bowl, combine the chopped spinach, crumbled feta, egg, breadcrumbs, olive oil, garlic, salt, pepper, and chili flakes (if using).
Mix everything together until well combined — the mixture should hold its shape when pressed.
Step 3: Form the Crisps
Using a spoon, scoop out small portions of the mixture and place them onto the prepared baking tray. Flatten each portion gently with the back of the spoon to form thin discs (about 2–3 inches wide).
Step 4: Bake
Bake in the preheated oven for 12–15 minutes, or until the crisps are golden brown around the edges and firm in the center.
For extra crispiness, you can flip them halfway through baking.
Step 5: Cool and Serve
Remove from the oven and let them cool on the tray for 5 minutes. They’ll become crispier as they cool.
Serve warm or at room temperature with a yogurt dipping sauce, tzatziki, or your favorite healthy dip.
