History
While Parmesan chicken is inspired by Italian cooking, it is not exactly the same as Chicken Parmesan (Parmigiana), which includes tomato sauce and mozzarella.
Crispy Parmesan Chicken evolved in North America as a simpler, sauce-free version using the same cheeses and herbs for flavor. It borrows techniques from classic Italian breaded cutlets (cotoletta), with Parmesan added to enhance the crust. Over time it has become a popular home-cooked meal due to its simplicity and universal appeal.

Formation (How the Dish Comes Together)
The “formation” refers to the structural layering and texture development that makes Crispy Parmesan Chicken special:
- Flour layer adheres to the chicken and helps the egg wash stick.
- Egg wash binds the Parmesan-breadcrumb coating securely.
- Parmesan-breadcrumb crust forms the signature crispy outer shell as it browns.
- Frying or baking dehydrates the coating, creating crunch while sealing in juices.
- Resting after cooking allows the crust to stabilize so it stays crisp.
