Ingredients

Honey Lime Chicken

  • 2 boneless, skinless chicken breasts
  • 3 tbsp honey
  • Zest and juice of 2 limes
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp chili flakes (optional)
  • Salt and black pepper, to taste

Lime Rice

  • 1 cup jasmine or basmati rice
  • 2 cups water or chicken broth
  • Juice of 1 lime
  • Zest of 1 lime
  • 1 tbsp butter or olive oil
  • Salt, to taste

Avocado Layer

  • 2 ripe avocados, diced
  • Juice of ½ lime
  • Salt, to taste

Garnish (Optional)

  • Fresh cilantro or parsley, chopped
  • Sesame seeds or chili flakes

Instructions & Methods

Method 1: Marinate the Chicken

  1. In a bowl, whisk together honey, lime juice, lime zest, olive oil, garlic, smoked paprika, chili flakes, salt, and pepper.
  2. Add the chicken breasts and coat thoroughly.
  3. Cover and marinate for at least 30 minutes (up to 4 hours for deeper flavor).

Method 2: Cook the Lime Rice

  1. Rinse the rice under cold water until clear.
  2. Add rice and water (or broth) to a saucepan and bring to a boil.
  3. Reduce heat, cover, and simmer for 12–15 minutes until tender.
  4. Remove from heat and fluff with a fork.
  5. Stir in butter, lime juice, lime zest, and salt. Set aside.

Method 3: Prepare the Avocado

  1. Gently toss diced avocado with lime juice and salt.
  2. Keep covered to prevent browning until ready to assemble.

Method 4: Cook the Chicken

  1. Heat a skillet or grill pan over medium-high heat.
  2. Remove chicken from marinade (reserve excess marinade).
  3. Cook chicken for 5–7 minutes per side until caramelized and cooked through.
  4. Pour reserved marinade into the pan and simmer for 1–2 minutes until thickened into a glaze.
  5. Remove chicken and let rest for 5 minutes, then slice.
