Crispy Parmesan Zucchini Rounds


🧾 Ingredients

Serves 4

  • 2 medium zucchini (about 1 lb), sliced into ¼-inch rounds
  • ½ cup grated Parmesan cheese (freshly grated works best)
  • ½ cup panko breadcrumbs
  • 1 tsp garlic powder
  • ½ tsp dried Italian seasoning
  • ¼ tsp paprika
  • Salt and black pepper to taste
  • 2 large eggs
  • 2 tbsp olive oil (or cooking spray for baking)
  • Optional: Fresh chopped parsley for garnish
  • Optional: Marinara sauce or ranch dressing for dipping

You can prepare these either baked or pan-fried. Both methods produce delicious results!


🔥 Method 1: Oven-Baked (Healthier Option)

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it.
  2. Prepare coating mixture
    In a shallow bowl, mix together Parmesan, panko, garlic powder, Italian seasoning, paprika, salt, and pepper.
  3. Beat the eggs
    In a separate bowl, whisk the eggs until smooth.
  4. Coat the zucchini
    Dip each zucchini round into the egg, then press into the Parmesan mixture, coating both sides evenly.
  5. Arrange on baking sheet
    Place rounds in a single layer without overlapping. Lightly spray tops with cooking spray for extra crispiness.
  6. Bake
    Bake for 18–22 minutes, flipping halfway through, until golden brown and crispy.
  7. Optional broil
    Broil for 1–2 minutes at the end for extra crunch (watch carefully).

🍳 Method 2: Pan-Fried (Extra Crispy)

  1. Follow steps 2–4 above to coat the zucchini.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add zucchini rounds in a single layer (cook in batches if needed).
  4. Fry for 2–3 minutes per side until golden and crispy.
  5. Transfer to a paper towel-lined plate to drain excess oil.

🌿 Serving Suggestions

  • Garnish with fresh parsley.
  • Serve with warm marinara sauce, ranch, or garlic aioli.
  • Pair with grilled chicken, pasta, or a fresh salad.

💡 Tips for Extra Crispiness

  • Pat zucchini dry before coating to remove excess moisture.
  • Use freshly grated Parmesan instead of pre-shredded.
  • Don’t overcrowd the pan or baking sheet.
  • For air fryer: Cook at 400°F (200°C) for 8–10 minutes, flipping halfway.
