You can prepare these either baked or pan-fried. Both methods produce delicious results!
🔥 Method 1: Oven-Baked (Healthier Option)
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it.
- Prepare coating mixture
In a shallow bowl, mix together Parmesan, panko, garlic powder, Italian seasoning, paprika, salt, and pepper. - Beat the eggs
In a separate bowl, whisk the eggs until smooth. - Coat the zucchini
Dip each zucchini round into the egg, then press into the Parmesan mixture, coating both sides evenly. - Arrange on baking sheet
Place rounds in a single layer without overlapping. Lightly spray tops with cooking spray for extra crispiness. - Bake
Bake for 18–22 minutes, flipping halfway through, until golden brown and crispy. - Optional broil
Broil for 1–2 minutes at the end for extra crunch (watch carefully).
