Louisiana Voodoo Fries (Cajun Cheese Fries with Ranch and Bacon)



Ingredients

For the Fries:

  • 1.5 lbs frozen seasoned French fries or fresh-cut fries
  • 1 tbsp olive oil (if baking fresh fries)
  • Salt to taste (if using fresh fries)

For the Cajun Cheese Sauce:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk (warm)
  • 1 cup shredded cheddar cheese (sharp or medium)
  • 1/2 cup shredded pepper jack cheese
  • 1–2 tsp Cajun seasoning (adjust to taste)
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika

Toppings:

  • 4–5 slices cooked bacon, chopped
  • 1/4 cup pickled jalapeños (optional, for heat)
  • 1/4 cup chopped green onions
  • 2 tbsp chopped parsley (optional)
  • Ranch dressing, for drizzling
  • Extra Cajun seasoning or hot sauce (optional)

Instructions

Step 1: Cook the Fries

  1. Oven Method: Preheat oven to 425°F (220°C). Spread fries on a baking sheet in a single layer and bake for 25–30 minutes until golden and crispy, flipping halfway through.
  2. Air Fryer: Air fry at 400°F (204°C) for 15–20 minutes, shaking halfway through.
  3. Frying (optional): Deep-fry for a crispier version. Drain on paper towels and season lightly with salt.

Step 2: Make the Cajun Cheese Sauce

  1. In a saucepan over medium heat, melt the butter.
  2. Whisk in the flour and stir for about 1 minute to create a roux.
  3. Slowly whisk in the warm milk, making sure there are no lumps. Stir continuously until it thickens (about 3–5 minutes).
  4. Lower heat and stir in both cheeses until melted.
  5. Add Cajun seasoning, garlic powder, and smoked paprika. Adjust seasoning to taste. Keep warm.

Step 3: Cook the Bacon

  1. In a skillet over medium heat, cook bacon until crisp. Drain on paper towels and chop.

Step 4: Assemble the Fries

  1. Place cooked fries on a large platter or baking sheet.
  2. Pour warm Cajun cheese sauce over the fries.
  3. Sprinkle bacon, pickled jalapeños (if using), and green onions on top.
  4. Drizzle with ranch dressing.
  5. Garnish with chopped parsley and an extra sprinkle of Cajun seasoning or a few dashes of hot sauce, if desired.
