Grilled Mahi Mahi with Mango Salsa


Ingredients

For the Grilled Mahi Mahi:

  • 4 mahi mahi fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (freshly squeezed)
  • 2 garlic cloves (minced)
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • Salt and black pepper (to taste)

For the Mango Salsa:

  • 2 ripe mangoes (diced)
  • 1 red bell pepper (diced)
  • ½ red onion (finely chopped)
  • 1 jalapeño (seeded and minced, optional for spice)
  • 2 tablespoons fresh cilantro (chopped)
  • Juice of 1 lime
  • Salt (to taste)

Instructions

  1. Prepare the marinade:
    In a small bowl, whisk together olive oil, lime juice, garlic, paprika, cumin, salt, and black pepper.
  2. Marinate the fish:
    Place mahi mahi fillets in a shallow dish or zip-top bag. Pour marinade over them, coating evenly. Refrigerate for 20–30 minutes.
  3. Make the mango salsa:
    In a mixing bowl, combine mango, bell pepper, onion, jalapeño, cilantro, lime juice, and salt. Mix gently and refrigerate until ready to serve.
  4. Grill the mahi mahi:
    Preheat grill to medium-high heat. Lightly oil the grates. Grill fillets for 4–5 minutes per side, or until fish flakes easily with a fork.
  5. Assemble and serve:
    Place grilled mahi mahi on a plate and top generously with fresh mango salsa. Garnish with extra lime wedges if desired.
