Chicken Cordon Bleu

📖 Introduction:

Chicken Cordon Bleu is a beloved dish known for its elegant presentation and rich, savory flavors. Originating in Switzerland, this dish features chicken breasts stuffed with ham and cheese, then breaded and baked or fried until golden. It’s the perfect dish for a special dinner or a comforting homemade treat.


🛒 Ingredients:

For the Chicken:

  • 2 large boneless, skinless chicken breasts
  • 4 slices of Swiss cheese (or Gruyère)
  • 4 slices of ham (smoked or honey ham works great)
  • Salt and pepper, to taste
  • Toothpicks or kitchen twine (to secure)

For Breading:

  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1 tablespoon milk
  • 1 cup breadcrumbs (panko for extra crunch)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

For Frying (Optional):

  • Vegetable or canola oil (if pan-frying)

Optional Dijon Cream Sauce:

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

🔪 Step 1: Prepare the Chicken

  1. Slice each chicken breast horizontally, but not all the way through — butterfly it open.
  2. Place the chicken between two sheets of plastic wrap. Pound gently with a meat mallet or rolling pin until about 1/4 inch thick.
  3. Season both sides with salt and pepper.

🧀 Step 2: Add the Filling

  1. Lay 2 slices of ham and 2 slices of cheese on each chicken breast.
  2. Roll the chicken tightly into a log, tucking in the sides. Secure with toothpicks or kitchen twine.

🥣 Step 3: Bread the Chicken

  1. Prepare three bowls:
    • Bowl 1: Flour
    • Bowl 2: Beaten egg mixed with milk
    • Bowl 3: Breadcrumbs mixed with Parmesan, garlic powder, and paprika
  2. Dredge each rolled chicken breast:
    • First in flour, then
    • Dip into egg mixture, then
    • Coat thoroughly in breadcrumb mix

🍳 Step 4: Cook It

Option 1: Pan-Fry + Bake (Best Texture)

  1. Heat oil in a skillet over medium heat.
  2. Brown the chicken rolls on all sides (about 2–3 mins per side).
  3. Transfer to a baking dish and bake at 375°F (190°C) for 20–25 minutes, until cooked through (internal temp 165°F / 74°C).

Option 2: Oven-Only (Healthier)

  1. Place breaded chicken on a baking rack over a sheet pan.
  2. Lightly spray with cooking oil.
  3. Bake at 400°F (200°C) for 25–30 minutes, or until golden and cooked through.

🥄 Optional: Dijon Cream Sauce

  1. In a small saucepan, melt butter over medium heat.
  2. Whisk in flour and cook for 1 minute.
  3. Slowly add milk, whisking constantly until smooth.
  4. Stir in Dijon mustard. Season with salt and pepper.
  5. Simmer for 2–3 minutes until thickened.

  • Drizzle with Dijon sauce or serve on the side.

Tips for Success:

  • Pound the chicken evenly for easy rolling.
  • Use toothpicks or twine to prevent unrolling.
  • Chill the rolled chicken for 15 mins before breading to help them hold shape.
  • Want to freeze? Bread them and freeze before cooking. Bake from frozen at 375°F for 35–40 minutes.
