Crispy Air Fryer Potato Cakes


Introduction

These Air Fryer Potato Cakes are a fantastic way to turn leftover mashed potatoes or freshly boiled potatoes into something truly special. Golden and crispy on the outside, with a soft, creamy center, they make an excellent side dish, snack, or even a quick lunch. With just a handful of ingredients and no deep frying, they’re healthier and easier than traditional potato cakes.


Ingredients

(Makes about 8 small potato cakes)

  • 2 cups mashed potatoes (can be leftover or freshly mashed)
  • 1/2 cup shredded cheddar cheese (optional but recommended)
  • 1/4 cup chopped green onions or chives
  • 1/4 cup breadcrumbs (plus extra for coating)
  • 1 egg
  • Salt and pepper, to taste
  • 1/2 tsp garlic powder (optional)
  • Cooking spray or a light brush of oil

Instructions

Step 1: Prepare the Potato Mixture

  1. In a large bowl, combine:
    • 2 cups mashed potatoes
    • 1/2 cup shredded cheddar cheese
    • 1/4 cup chopped green onions
    • 1/4 cup breadcrumbs
    • 1 egg
    • Season with salt, pepper, and optional garlic powder.
  2. Mix thoroughly until all ingredients are well combined. The mixture should be thick enough to shape into patties. If too soft, add a bit more breadcrumbs.

Step 2: Form the Cakes

  1. Scoop out portions (about 1/4 cup) of the potato mixture and form into small patties or cakes, about ½ inch thick.
  2. Optional: Lightly coat each cake in extra breadcrumbs for added crispiness.

Step 3: Air Fry the Potato Cakes

  1. Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
  2. Lightly spray the air fryer basket with oil or non-stick spray.
  3. Place the potato cakes in the basket in a single layer (don’t overcrowd).
  4. Spray the tops of the cakes lightly with oil.
  5. Air fry for 10–12 minutes, flipping halfway through, until golden brown and crispy on both sides.

Serving Suggestions

  • Serve hot with sour cream, ketchup, or a dollop of Greek yogurt.
  • Great as a side for breakfast (with eggs), lunch, or dinner.
  • Add a fried egg on top for a simple, filling meal!
