Introduction
Thighs & Potatoes Delight is a comforting dish that combines crispy golden chicken thighs with tender, seasoned potatoes baked together in a single pan. Ingredients
- 6 bone-in, skin-on chicken thighs
- 4 medium potatoes (Yukon gold or red), cut into wedges
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp butter, melted
- 1 tsp smoked paprika
- 1 tsp dried thyme (or rosemary)
- 1 tsp dried oregano
- ½ tsp chili flakes (optional for heat)
- Juice of ½ lemon
- Salt & black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the chicken & potatoes
- Pat chicken thighs dry and season with salt, pepper, paprika, and lemon juice.
- In a bowl, toss potato wedges with olive oil, butter, garlic, thyme, oregano, salt, and pepper.
- Sear the chicken
- In a large ovenproof skillet or pan, heat a little olive oil.
- Place chicken thighs skin-side down and sear for 4–5 minutes until golden and crispy. Flip and cook for another 3 minutes. Remove from the pan.
- Assemble the dish
- Add the seasoned potatoes to the skillet, stirring to coat with the drippings.
- Place chicken thighs on top of the potatoes, skin-side up.
- Bake
- Preheat oven to 200°C (400°F).
- Roast uncovered for 35–40 minutes until chicken reaches 75°C (165°F) internal temperature and potatoes are golden and tender.
- Finish & serve
- Garnish with fresh parsley and a squeeze of lemon juice.
- Serve hot with a side of salad or steamed vegetables.
