Ingredients

For the Sweet Potato Rounds:

  • 2 large sweet potatoes (orange-fleshed)
  • 2 tablespoons olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional)

For the Toppings:

  • ½ cup crumbled feta cheese
  • 2–3 tablespoons honey (to taste)
  • 1 tablespoon fresh thyme or rosemary leaves (or parsley for a fresher flavor)
  • Cracked black pepper, to finish
  • Optional: crushed walnuts or pecans for crunch

Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper or lightly grease it.

Step 2: Slice the Sweet Potatoes

  1. Wash and scrub the sweet potatoes (no need to peel unless you prefer).
  2. Slice into ½-inch thick rounds. Try to make them uniform for even roasting.

Step 3: Season and Roast

  1. In a large bowl, toss the sweet potato rounds with olive oil, salt, pepper, and smoked paprika if using.
  2. Arrange the rounds in a single layer on the baking sheet.
  3. Roast for 25–30 minutes, flipping halfway through, until the rounds are golden and tender.

Step 4: Assemble the Dish

  1. Once out of the oven, transfer the sweet potato rounds to a serving platter.
  2. Sprinkle each round with crumbled feta cheese while still warm.
  3. Drizzle honey over the rounds — as much or as little as you like.
  4. Garnish with fresh herbs and a touch of cracked black pepper.
  5. Optional: Sprinkle with crushed nuts for added crunch and richness.

Method Summary

  1. Prep the oven and baking sheet.
  2. Slice and season the sweet potatoes.
  3. Roast until tender and golden.
  4. Top with feta, honey, herbs, and optional nuts.
  5. Serve warm and enjoy!

Tips & Variations

  • Make it vegan: Swap feta for a plant-based cheese or a dollop of cashew cream.
  • Add spice: A touch of chili flakes or a drizzle of hot honey gives a sweet-spicy kick.
  • Serve cold: These also taste great chilled, making them perfect for a picnic or lunchbox.
  • Use goat cheese instead of feta for a tangier twist.
