- 2 large chicken breasts, sliced into strips or chunks
- 2 tbsp olive oil (or butter)
- 3 cups fresh spinach, roughly chopped
- 1 ½ cups mushrooms, sliced (button or cremini work well)
- 3 garlic cloves, minced
- 1 cup heavy cream
- ½ cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- ½ tsp dried thyme
- ½ tsp smoked paprika
- Salt & black pepper, to taste
- Optional: Red pepper flakes for heat
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Cook the Chicken
- In a large skillet, heat 1 tbsp olive oil over medium-high heat.
- Season the chicken with salt, pepper, and paprika.
- Sauté the chicken until golden and just cooked through (about 5–6 minutes). Remove and set aside.
3. Sauté the Veggies
- In the same pan, add another 1 tbsp olive oil.
- Sauté the mushrooms until they start to brown (about 4 minutes).
- Add the garlic and cook for 1 more minute.
- Add the spinach and cook until wilted. Turn off the heat.
4. Make the Creamy Sauce
- Stir in the cream cheese, heavy cream, Parmesan, and thyme.
- Mix until the cream cheese is fully melted and the sauce is smooth.
- Taste and adjust seasoning with salt, pepper, and optional red pepper flakes.
5. Assemble the Dish
- In a greased baking dish, spread the cooked chicken evenly.
- Pour the creamy spinach-mushroom mixture over the chicken.
- Top with shredded mozzarella.
6. Bake
- Bake uncovered for 20–25 minutes, or until bubbly and golden on top.
7. Garnish & Serve
- Let rest for 5 minutes before serving.
- Garnish with fresh parsley or a sprinkle of Parmesan, if desired.
