Ingredients (for 4 snack boxes)
- Protein & Fats:
- 8 boiled eggs
- 8 slices turkey, ham, or salami (sugar-free)
- 8 cheese cubes or slices (cheddar, mozzarella, or gouda)
- ยฝ cup mixed nuts (almonds, pecans, walnuts โ unsalted)
- Vegetables (low-carb):
- 1 cup cucumber slices
- 1 cup celery sticks
- 1 cup cherry tomatoes (optional, in moderation)
- Extras:
- 4 tbsp guacamole (or avocado slices with lemon to prevent browning)
- 4 tbsp cream cheese or ranch dip
- A few olives or pickles for flavor
Preparation
- Cook the Protein
- Boil the eggs for 10 minutes, then cool and peel. Slice in half or keep whole.
- Roll up the slices of turkey, ham, or salami.
- Prep the Veggies
- Wash and cut cucumbers into slices or sticks.
- Wash celery and cut into sticks.
- Keep cherry tomatoes whole.
- Assemble the Snack Boxes
- In each meal-prep container, place:
- 2 boiled eggs
- 2 rolled deli slices
- 2 cheese cubes/slices
- A handful of nuts
- A portion of cucumber and celery
- A few olives or pickles
- 1 tbsp guacamole or cream cheese dip in a small cup
