Ingredients
For the Fries:
- 1.5 lbs frozen seasoned French fries or fresh-cut fries
- 1 tbsp olive oil (if baking fresh fries)
- Salt to taste (if using fresh fries)
For the Cajun Cheese Sauce:
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup whole milk (warm)
- 1 cup shredded cheddar cheese (sharp or medium)
- 1/2 cup shredded pepper jack cheese
- 1–2 tsp Cajun seasoning (adjust to taste)
- 1/4 tsp garlic powder
- 1/4 tsp smoked paprika
Toppings:
- 4–5 slices cooked bacon, chopped
- 1/4 cup pickled jalapeños (optional, for heat)
- 1/4 cup chopped green onions
- 2 tbsp chopped parsley (optional)
- Ranch dressing, for drizzling
- Extra Cajun seasoning or hot sauce (optional)
Instructions
Step 1: Cook the Fries
- Oven Method: Preheat oven to 425°F (220°C). Spread fries on a baking sheet in a single layer and bake for 25–30 minutes until golden and crispy, flipping halfway through.
- Air Fryer: Air fry at 400°F (204°C) for 15–20 minutes, shaking halfway through.
- Frying (optional): Deep-fry for a crispier version. Drain on paper towels and season lightly with salt.
Step 2: Make the Cajun Cheese Sauce
- In a saucepan over medium heat, melt the butter.
- Whisk in the flour and stir for about 1 minute to create a roux.
- Slowly whisk in the warm milk, making sure there are no lumps. Stir continuously until it thickens (about 3–5 minutes).
- Lower heat and stir in both cheeses until melted.
- Add Cajun seasoning, garlic powder, and smoked paprika. Adjust seasoning to taste. Keep warm.
Step 3: Cook the Bacon
- In a skillet over medium heat, cook bacon until crisp. Drain on paper towels and chop.
Step 4: Assemble the Fries
- Place cooked fries on a large platter or baking sheet.
- Pour warm Cajun cheese sauce over the fries.
- Sprinkle bacon, pickled jalapeños (if using), and green onions on top.
- Drizzle with ranch dressing.
- Garnish with chopped parsley and an extra sprinkle of Cajun seasoning or a few dashes of hot sauce, if desired.
