Melt-in-Your-Mouth Chicken


This creamy, cheesy baked chicken lives up to its name — it’s incredibly tender and flavorful. Perfect for a family dinner or meal prep, and it pairs well with veggies, rice, or potatoes.


Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs, if preferred)
  • 1 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika (optional, for color and slight smokiness)
  • Fresh chopped parsley or chives (for garnish, optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:
    • Pat the chicken breasts dry with paper towels.
    • If they are very thick, consider slicing them in half horizontally or pounding them to an even thickness for even cooking.
  3. Make the Topping:
    • In a medium bowl, combine:
      • 1 cup mayonnaise (or Greek yogurt)
      • 1/2 cup grated Parmesan
      • 1/2 tsp garlic powder
      • 1/2 tsp onion powder
      • 1/2 tsp salt
      • 1/2 tsp black pepper
      • Optional: 1 tsp paprika for color
    • Mix well until smooth.
  4. Assemble:
    • Place the chicken breasts in a greased or parchment-lined baking dish.
    • Spread the mayo-Parmesan mixture evenly over the top of each piece of chicken, covering completely.
  5. Bake:
    • Bake uncovered in the preheated oven for 35–40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the top is golden and bubbly.
    • Optionally, broil the last 2–3 minutes for a golden-brown top — watch carefully so it doesn’t burn.
  6. Garnish and Serve:
    • Let rest for 5 minutes before serving.
    • Sprinkle with fresh chopped parsley or chives for a pop of color.
