This creamy, cheesy baked chicken lives up to its name — it’s incredibly tender and flavorful. Perfect for a family dinner or meal prep, and it pairs well with veggies, rice, or potatoes.
Ingredients:
- 4 boneless, skinless chicken breasts (or thighs, if preferred)
- 1 cup mayonnaise (or Greek yogurt for a lighter version)
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1 teaspoon paprika (optional, for color and slight smokiness)
- Fresh chopped parsley or chives (for garnish, optional)
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Chicken:
- Pat the chicken breasts dry with paper towels.
- If they are very thick, consider slicing them in half horizontally or pounding them to an even thickness for even cooking.
- Make the Topping:
- In a medium bowl, combine:
- 1 cup mayonnaise (or Greek yogurt)
- 1/2 cup grated Parmesan
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- Optional: 1 tsp paprika for color
- Mix well until smooth.
- In a medium bowl, combine:
- Assemble:
- Place the chicken breasts in a greased or parchment-lined baking dish.
- Spread the mayo-Parmesan mixture evenly over the top of each piece of chicken, covering completely.
- Bake:
- Bake uncovered in the preheated oven for 35–40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the top is golden and bubbly.
- Optionally, broil the last 2–3 minutes for a golden-brown top — watch carefully so it doesn’t burn.
- Garnish and Serve:
- Let rest for 5 minutes before serving.
- Sprinkle with fresh chopped parsley or chives for a pop of color.
