- ½ teaspoon mustard seeds
- A few sprigs of fresh herbs (thyme, oregano, cilantro, or dill)
- A slice of jalapeño or chili flakes (for heat)

- Prepare the onion:
Peel and slice the red onion thinly (use a sharp knife or mandoline for even slices). - Make the brine:
In a small saucepan, combine water, vinegar, sugar, and salt.
Heat over medium until the sugar and salt dissolve (about 1–2 minutes).
Remove from heat. - Pack the jar:
Place the sliced onions in a clean glass jar. Add optional flavorings (garlic, peppercorns, herbs, etc.) if using. - Pour the brine:
Carefully pour the hot brine over the onions, making sure they’re fully submerged.
Press them down with a spoon if needed. - Cool and store:
Let the jar cool at room temperature (about 20–30 minutes).
