Quick Pickled Red Onions


📝 Ingredients:

  • 1 large red onion, thinly sliced
  • 1 cup water
  • ½ cup apple cider vinegar (or white vinegar)
  • 1 tablespoon sugar
  • 1 ½ teaspoons salt
  • Optional flavor add-ins:
    • 1 garlic clove, sliced
    • ½ teaspoon whole black peppercorns
    • ½ teaspoon mustard seeds
    • A few sprigs of fresh herbs (thyme, oregano, cilantro, or dill)
    • A slice of jalapeño or chili flakes (for heat)

🍴 Instructions:

  1. Prepare the onion:
    Peel and slice the red onion thinly (use a sharp knife or mandoline for even slices).
  2. Make the brine:
    In a small saucepan, combine water, vinegar, sugar, and salt.
    Heat over medium until the sugar and salt dissolve (about 1–2 minutes).
    Remove from heat.
  3. Pack the jar:
    Place the sliced onions in a clean glass jar. Add optional flavorings (garlic, peppercorns, herbs, etc.) if using.
  4. Pour the brine:
    Carefully pour the hot brine over the onions, making sure they’re fully submerged.
    Press them down with a spoon if needed.
  5. Cool and store:
    Let the jar cool at room temperature (about 20–30 minutes).
    Seal and refrigerate.
