Thai Pineapple Fried Rice with Shrimp

For 2–3 servings:

Protein & Rice

  • 200g (7 oz) shrimp, peeled and deveined
  • 2 cups cooked jasmine rice (preferably day-old, chilled)
  • 2 eggs (optional)

Fruits & Vegetables

  • 1 cup fresh pineapple chunks (or canned, drained)
  • 1/2 small onion, diced
  • 1/2 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 1/4 cup frozen peas and carrots (optional)
  • 1 small Thai chili or 1/4 tsp chili flakes (optional, for heat)

Sauces & Seasoning

  • 1 1/2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp oyster sauce (optional)
  • 1/2 tsp sugar
  • 1 tsp curry powder
  • White or black pepper, to taste

Cooking & Garnish

  • 2 tbsp vegetable oil
  • 2 tbsp roasted cashews or chopped unsalted peanuts
  • Lime wedges (for serving)
  • Fresh cilantro (for garnish)

1. Prepare the Ingredients

  • If using fresh pineapple, cut it into small bite-size chunks.
  • If you want to serve in a pineapple boat: slice the pineapple in half lengthwise, carve out the flesh, and set the shells aside.
  • Pat shrimp dry and season lightly with a pinch of salt and pepper.
  • Break up your chilled rice with a fork or hands to separate clumps.

2. Cook the Shrimp

  • Heat 1 tbsp oil in a wok or large skillet over medium-high heat.
  • Add shrimp and cook 1–2 minutes per side, until just cooked through and pink.
  • Remove shrimp from the pan and set aside.

3. Scramble Eggs (Optional)

  • Add a bit more oil if needed.
  • Crack the eggs into the pan and scramble. Once cooked, push to the side or remove and set aside.

4. Stir-Fry the Veggies

  • Add remaining oil and sautΓ© garlic and onions for 30 seconds until fragrant.
  • Add bell pepper, peas/carrots, and curry powder. Stir-fry for 1 minute until veggies soften slightly.
  • Add pineapple and cook for another minute to warm and slightly caramelize.

5. Add the Rice

  • Increase heat to high.
  • Add the rice and break it up into the pan, mixing thoroughly with veggies and pineapple.
  • Add soy sauce, fish sauce, oyster sauce (if using), sugar, and pepper.
  • Stir well to coat all the rice evenly and ensure it’s heated through.

6. Finish the Dish

  • Return shrimp (and scrambled eggs, if using) to the pan.
  • Toss in green onions and roasted cashews.
  • Stir-fry everything together for another minute.

7. Serve

  • Spoon into a pineapple boat or serve on a plate.
  • Garnish with chopped cilantro, extra cashews, and lime wedges.
