Ingredients
For the Grilled Mahi Mahi:
- 4 mahi mahi fillets (about 6 oz each)
- 2 tablespoons olive oil
- 2 tablespoons lime juice (freshly squeezed)
- 2 garlic cloves (minced)

- 2 ripe mangoes (diced)
- 1 red bell pepper (diced)

Instructions
- Prepare the marinade:
In a small bowl, whisk together olive oil, lime juice, garlic, paprika, cumin, salt, and black pepper. - Marinate the fish:
Place mahi mahi fillets in a shallow dish or zip-top bag. Pour marinade over them, coating evenly. Refrigerate for 20–30 minutes. - Make the mango salsa:
In a mixing bowl, combine mango, bell pepper, onion, jalapeño, cilantro, lime juice, and salt. Mix gently and refrigerate until ready to serve. - Grill the mahi mahi:
Preheat grill to medium-high heat. Lightly oil the grates. Grill fillets for 4–5 minutes per side, or until fish flakes easily with a fork. - Assemble and serve:
Place grilled mahi mahi on a plate and top generously with fresh mango salsa. Garnish with extra lime wedges if desired.
