Cheesy Smoked Sausage & Potato Casserole

Ingredients:

For the casserole:

  • 1 lb (450g) smoked sausage, sliced into ¼-inch rounds
  • 2 lbs (900g) russet or Yukon gold potatoes, peeled and diced into ½-inch cubes
  • 1 small onion, finely chopped
  • 2 tbsp olive oil or butter
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp paprika (optional for color & smoky flavor)
  • 2 cups shredded sharp cheddar cheese (or cheese blend)
  • ½ cup shredded mozzarella (optional, for stretch)

For the cheese sauce:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 ½ cups milk (whole milk preferred)
  • ½ cup heavy cream (or use more milk)
  • 1 ½ cups shredded cheddar cheese
  • Salt & pepper to taste
  • Pinch of cayenne or mustard powder (optional for depth)

Instructions:

🔹 Step 1: Preheat & Prep

  • Preheat your oven to 375°F (190°C).
  • Grease a 9×13-inch casserole or baking dish with butter or non-stick spray.

🔹 Step 2: Cook the Smoked Sausage

  • In a large skillet over medium heat, add 1 tbsp oil or butter.
  • Add the smoked sausage slices and cook until browned and slightly crispy (about 4-5 minutes per side).
  • Remove and set aside.

🔹 Step 3: Sauté Potatoes & Onions

  • In the same skillet, add remaining oil (if needed), and sauté the diced potatoes and onions.
  • Season with salt, pepper, garlic powder, and paprika.
  • Cook for about 10-12 minutes, stirring occasionally, until potatoes are just tender but not fully cooked.

  • In a medium saucepan, melt 2 tbsp butter over medium heat.
  • Stir in the flour and whisk for 1-2 minutes to make a roux.
  • Slowly whisk in milk and cream until smooth.
  • Bring to a gentle simmer and stir constantly until the sauce thickens (about 5 minutes).
  • Remove from heat and stir in the cheddar cheese until melted and smooth.
  • Season with salt, pepper, and optional cayenne or mustard powder.

  • In your greased baking dish, layer the cooked potatoes and onions.
  • Add the smoked sausage on top.
  • Pour the cheese sauce evenly over everything.
  • Sprinkle with remaining shredded cheddar and mozzarella on top.

  • Cover the dish with foil and bake for 25 minutes.
  • Remove foil and bake for another 15-20 minutes or until bubbly and golden on top.
  • Let rest for 5-10 minutes before serving.
