🛒 Ingredients
For approximately 6 half-pint (8 oz) jars:
- 2 cups orange juice (fresh-squeezed or high-quality store-bought)
- 1/4 cup lemon juice (fresh for brightness and acidity)
- 1 package (1.75 oz) powdered fruit pectin (like Sure-Jell)
- 4 cups granulated sugar
- 1/2 tsp butter (optional – reduces foaming)
- 2 tsp vanilla extract (use real vanilla for best flavor)
- 1/2 cup sweetened condensed milk (for the creamy “dreamsicle” flavor)
🍳 Instructions & Method
Step 1: Prepare your jars
- Wash jars, lids, and bands in hot, soapy water.
- Sterilize jars by boiling them for 10 minutes or keeping them hot in a 200°F (93°C) oven.
- Place lids in hot (not boiling) water to soften the seal.
Step 2: Cook the jelly base
- In a large, deep saucepan, combine the orange juice, lemon juice, and pectin.
- Stir well to dissolve the pectin.
- Bring the mixture to a full rolling boil over high heat, stirring constantly.
- Add all the sugar at once and stir until completely dissolved.
- Add the butter to reduce foaming (optional but helpful).
Step 3: Boil the mixture
- Return the mixture to a full rolling boil — a boil that doesn’t stop bubbling when stirred.
- Boil hard for exactly 1 minute, stirring constantly.
Step 4: Add vanilla & condensed milk
- Remove the pan from heat.
- Quickly stir in the vanilla extract and sweetened condensed milk.
- Stir until the mixture is fully blended and smooth.
- Skim off any foam if necessary.
Step 5: Jar the jelly
- Ladle the hot jelly into prepared jars, leaving 1/4-inch headspace.
- Wipe the rims clean with a damp cloth.
- Place lids on jars and screw bands on until fingertip tight.
Step 6: Process in a water bath
- Process the jars in a boiling water bath for 10 minutes (adjust for altitude if needed).
- Remove jars and let cool for 12–24 hours.
- Check seals — lids should not flex when pressed.
🧊 Storage & Use
- Store sealed jars in a cool, dark place for up to 1 year.
- Refrigerate after opening and use within 3 weeks.
- Perfect on scones, biscuits, waffles, or even as a filling in cupcakes!
🌟 Tips
- For a more intense orange flavor, add 1 tsp of finely grated orange zest with the juice.
- Want a softer set? Use 3/4 of the pectin package.
- Looking for a dairy-free version? Swap the condensed milk for coconut cream and use vanilla bean paste.
