Dreamsicle Jelly Recipe


Introduction

Dreamsicle Jelly captures the nostalgic flavor of orange creamsicles in a smooth, glossy spread. It combines the bright tang of orange juice with the creamy richness of vanilla for a jelly that’s both vibrant and comforting. 🛒 Ingredients

For approximately 6 half-pint (8 oz) jars:

  • 2 cups orange juice (fresh-squeezed or high-quality store-bought)
  • 1/4 cup lemon juice (fresh for brightness and acidity)
  • 1 package (1.75 oz) powdered fruit pectin (like Sure-Jell)
  • 4 cups granulated sugar
  • 1/2 tsp butter (optional – reduces foaming)
  • 2 tsp vanilla extract (use real vanilla for best flavor)
  • 1/2 cup sweetened condensed milk (for the creamy “dreamsicle” flavor)

🍳 Instructions & Method

Step 1: Prepare your jars

  1. Wash jars, lids, and bands in hot, soapy water.
  2. Sterilize jars by boiling them for 10 minutes or keeping them hot in a 200°F (93°C) oven.
  3. Place lids in hot (not boiling) water to soften the seal.

Step 2: Cook the jelly base

  1. In a large, deep saucepan, combine the orange juice, lemon juice, and pectin.
  2. Stir well to dissolve the pectin.
  3. Bring the mixture to a full rolling boil over high heat, stirring constantly.
  4. Add all the sugar at once and stir until completely dissolved.
  5. Add the butter to reduce foaming (optional but helpful).

Step 3: Boil the mixture

  1. Return the mixture to a full rolling boil — a boil that doesn’t stop bubbling when stirred.
  2. Boil hard for exactly 1 minute, stirring constantly.

Step 4: Add vanilla & condensed milk

  1. Remove the pan from heat.
  2. Quickly stir in the vanilla extract and sweetened condensed milk.
  3. Stir until the mixture is fully blended and smooth.
  4. Skim off any foam if necessary.

Step 5: Jar the jelly

  1. Ladle the hot jelly into prepared jars, leaving 1/4-inch headspace.
  2. Wipe the rims clean with a damp cloth.
  3. Place lids on jars and screw bands on until fingertip tight.

Step 6: Process in a water bath

  1. Process the jars in a boiling water bath for 10 minutes (adjust for altitude if needed).
  2. Remove jars and let cool for 12–24 hours.
  3. Check seals — lids should not flex when pressed.
