Chicken, Spinach & Mushroom Low-Carb Oven Dish


Introduction

This Chicken, Spinach & Mushroom dish is a satisfying low-carb oven bake that’s full of protein, healthy fats, and nutrients. Juicy chicken breast is combined with sautéed mushrooms, fresh spinach, garlic, and a rich cream and cheese sauce. It’s simple enough for a weeknight meal but impressive enough for guests. The best part? It’s all made in one dish with minimal cleanup.


Ingredients

  • 2 large chicken breasts, sliced into strips or chunks
  • 2 tbsp olive oil (or butter)
  • 3 cups fresh spinach, roughly chopped
  • 1 ½ cups mushrooms, sliced (button or cremini work well)
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ½ tsp dried thyme
  • ½ tsp smoked paprika
  • Salt & black pepper, to taste
  • Optional: Red pepper flakes for heat

Instructions

1. Preheat the Oven

Preheat your oven to 375°F (190°C).

2. Cook the Chicken

  • In a large skillet, heat 1 tbsp olive oil over medium-high heat.
  • Season the chicken with salt, pepper, and paprika.
  • Sauté the chicken until golden and just cooked through (about 5–6 minutes). Remove and set aside.

3. Sauté the Veggies

  • In the same pan, add another 1 tbsp olive oil.
  • Sauté the mushrooms until they start to brown (about 4 minutes).
  • Add the garlic and cook for 1 more minute.
  • Add the spinach and cook until wilted. Turn off the heat.

4. Make the Creamy Sauce

  • Stir in the cream cheese, heavy cream, Parmesan, and thyme.
  • Mix until the cream cheese is fully melted and the sauce is smooth.
  • Taste and adjust seasoning with salt, pepper, and optional red pepper flakes.

5. Assemble the Dish

  • In a greased baking dish, spread the cooked chicken evenly.
  • Pour the creamy spinach-mushroom mixture over the chicken.
  • Top with shredded mozzarella.

6. Bake

  • Bake uncovered for 20–25 minutes, or until bubbly and golden on top.

7. Garnish & Serve

  • Let rest for 5 minutes before serving.
  • Garnish with fresh parsley or a sprinkle of Parmesan, if desired.
