Inspired by the rich flavors of French onion soup, it features caramelized onions, Gruyère or Swiss cheese, and herbs baked right into a juicy meat mixture. For the Caramelized Onions:

  • 2 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar (optional, to speed caramelization)
  • Pinch of salt

For the Meatloaf:

  • 1.5 lbs (680 g) ground beef (80/20 is ideal)
  • ½ cup caramelized onions (from above)
  • 1 cup shredded Gruyère or Swiss cheese
  • ½ cup plain breadcrumbs
  • 2 eggs
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh thyme leaves (or 1 tsp dried)
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper

For the Topping:

  • Remaining caramelized onions
  • ¾ cup shredded Gruyère or Swiss cheese
  • Optional garnish: Fresh thyme or parsley

Step 1: Caramelize the Onions

  1. In a large skillet over medium heat, melt the butter and olive oil.
  2. Add the sliced onions and a pinch of salt.

  4. Set aside to cool. Reserve about half for the topping.

Step 2: Prepare the Meatloaf Mixture

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine:
    • Ground beef
    • ½ cup caramelized onions
    • 1 cup shredded cheese
    • Breadcrumbs
    • Eggs
    • Worcestershire sauce
    • Dijon mustard
    • Thyme
    • Minced garlic
    • Salt and pepper
  3. Mix gently with your hands or a spatula until just combined. Do not overmix — that can make the meatloaf tough.

Step 3: Shape & Bake

  1. Line a baking sheet with parchment paper or foil, or use a loaf pan.
  2. Shape the meat mixture into a loaf shape (roughly 9×5 inches) or press it into the pan.
  3. Bake uncovered for 35 minutes.

Step 4: Add the Topping

  1. Remove from the oven and carefully top the loaf with:
    • Remaining caramelized onions
    • ¾ cup shredded cheese
  2. Return to oven and bake another 15–20 minutes, or until internal temperature reaches 160°F (71°C) and the cheese is melted and bubbly.

Step 5: Rest & Serve

  1. Let the meatloaf rest for 10 minutes before slicing — this helps the juices redistribute and gives you clean slices.
  2. Garnish with a little fresh thyme or parsley, if desired.
  3. Serve with mashed potatoes, roasted vegetables, or a green salad.
