Cheesy Cajun Alfredo Pasta with Velveeta Chicken Linguine

📝 Ingredients:

For the Pasta:

  • 12 oz linguine pasta
  • 2 tbsp olive oil
  • 1 lb boneless skinless chicken breasts (or thighs), cut into bite-sized pieces
  • 1 tbsp Cajun seasoning (plus extra to taste)
  • Salt and pepper to taste
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 bell pepper (red or green), diced
  • 1 cup heavy cream
  • 1/2 cup milk (whole or 2%)
  • 8 oz Velveeta cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese (optional, for topping)
  • Fresh parsley, chopped (for garnish)

👨‍🍳 Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Cook linguine according to package directions until al dente. Drain and set aside.
  2. Cook the Chicken:
    • In a large skillet, heat olive oil over medium-high heat.
    • Season chicken with Cajun seasoning, salt, and pepper.
    • Cook chicken until browned and fully cooked (about 6–8 minutes). Remove from skillet and set aside.
  3. Sauté Veggies:
    • In the same skillet, melt butter.
    • Add onion, garlic, and bell pepper. Sauté until softened (about 3–4 minutes).
  4. Make the Alfredo Sauce:
    • Pour in heavy cream and milk. Stir and bring to a simmer.
    • Add Velveeta cubes and stir until completely melted and smooth.
    • Mix in Parmesan cheese. Adjust seasoning with more Cajun spice, salt, and pepper as needed.
  5. Combine Everything:
    • Add cooked pasta and chicken to the sauce. Toss to coat evenly.
  6. (Optional) Bake for Extra Cheesiness:
    • Preheat oven to 375°F (190°C).
    • Pour pasta mixture into a greased 9×13-inch baking dish.
    • Sprinkle mozzarella cheese on top.
    • Bake uncovered for 15–20 minutes, or until bubbly and golden.
  7. Garnish & Serve:
    • Sprinkle with chopped parsley and a pinch of extra Cajun seasoning.
    • Serve hot with garlic bread or a side salad.
