Parmesan Crusted Chicken

Introduction

Parmesan Crusted Chicken is a flavorful, crispy dish that brings together the nutty richness of Parmesan cheese and the juicy tenderness of chicken breasts. This recipe uses simple ingredients to create a restaurant-quality meal in under 30 minutes. Serve it with a fresh green salad, roasted vegetables, or creamy mashed potatoes for a complete meal.

📝 Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour (for dredging)
  • 2 large eggs
  • 1 tablespoon water
  • 1 cup grated Parmesan cheese (freshly grated is best)
  • 1 cup breadcrumbs (Panko for extra crunch, or regular)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning (optional)
  • 2–3 tablespoons olive oil (for frying)
  • 2 tablespoons butter (for extra richness)

🍳 Instructions:

Step 1: Prepare the Chicken

  • If the chicken breasts are thick, slice them horizontally to make cutlets (about ½ inch thick).
  • Pat the chicken dry with paper towels.
  • Season both sides with salt and pepper.

Step 2: Set Up a Breading Station

  1. Flour Plate: Place flour on a shallow plate.
  2. Egg Wash Bowl: In a bowl, whisk the eggs with 1 tablespoon of water.
  3. Breadcrumb Mixture Plate: In another plate, mix together the Parmesan cheese, breadcrumbs, garlic powder, and Italian seasoning.

Step 3: Bread the Chicken

  • Dredge each chicken breast in the flour, shaking off the excess.
  • Dip into the egg mixture, ensuring it’s fully coated.
  • Press into the Parmesan-breadcrumb mixture, coating both sides well. Press firmly to ensure it sticks.

Step 4: Cook the Chicken

  • Heat olive oil and butter in a large skillet over medium heat.
  • Once hot, add the chicken (don’t overcrowd the pan; cook in batches if needed).
  • Cook for 4–5 minutes per side, or until golden brown and the internal temperature reaches 165°F (75°C).
  • If the coating is browning too fast before the chicken is cooked through, lower the heat slightly.

Step 5: Serve

  • Transfer to a paper towel-lined plate to drain excess oil.
  • Let rest for 2–3 minutes before serving.
  • Garnish with chopped parsley, lemon wedges, or a drizzle of balsamic glaze for extra flair.

🍽️ Serving Suggestions:

  • Serve with garlic mashed potatoes, roasted veggies, or a crisp Caesar salad.
  • For a low-carb option, pair it with sautéed zucchini noodles or cauliflower mash.

🔁 Method Summary:

  1. Pound or slice chicken to even thickness.
  2. Dredge in flour → egg wash → Parmesan-breadcrumb mixture.
  3. Pan-fry until golden and cooked through.
  4. Serve hot with your favorite sides.
