Ingredients
🐔 For the Greek Chicken Marinade:
- 500g boneless chicken thighs or breasts
- 3 tbsp Greek yogurt
- 2 tbsp olive oil
- 3 garlic cloves, minced
- Juice of 1 lemon
- Zest of 1 lemon
- 1 tsp dried oregano
- ½ tsp ground cumin
- Salt and black pepper, to taste

- 2 tbsp olive oil
- Juice of ½ lemon
- ½ tsp Dijon mustard (optional)
- 1 tsp honey
- 1 garlic clove, finely grated or minced
- Pinch of salt and pepper

- 1 cup hummus (store-bought or homemade)
- 1 cup tzatziki
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- ½ red onion, thinly sliced
- ½ cup Kalamata olives
- Feta cheese, crumbled
- Warm pita bread or flatbreads
- Fresh parsley or dill, for garnish
- Optional: pickled red onions or pepperoncini
Method & Instructions
1. Marinate the Chicken
- In a large bowl, mix together the Greek yogurt, olive oil, garlic, lemon juice and zest, oregano, cumin, salt, and pepper.
- Add the chicken and toss to coat. Cover and marinate in the fridge for at least 1 hour (overnight is best for deeper flavor).
2. Make the Lemon Drizzle
- Whisk together olive oil, lemon juice, mustard, honey, garlic, salt, and pepper in a small bowl until emulsified.
- Taste and adjust lemon or sweetness to preference. Set aside.
3. Cook the Chicken
- Heat a grill pan or skillet over medium-high heat. Lightly oil the surface.
- Cook the marinated chicken for 5–6 minutes per side, or until golden, charred in spots, and cooked through.
