Mediterranean Spinach and Feta Crisps


📝 Introduction

These Mediterranean Spinach and Feta Crisps are flaky, golden parcels filled with a flavorful mix of sautéed spinach, creamy feta cheese, and aromatic herbs. Inspired by the classic Greek spanakopita, these crisps are made with puff pastry for a quicker, crunchier take. They’re perfect for entertaining, as finger food, or just as a quick savory snack with a bit of flair.


🧂 Ingredients

For the Filling:

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 200g (7 oz) fresh spinach (or 150g frozen, thawed and squeezed dry)
  • 100g (3.5 oz) feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped (or 1 tbsp dried parsley)
  • 1/2 tsp dried oregano
  • Salt and black pepper, to taste
  • 1 egg, lightly beaten (to bind filling)

For the Crisps:

  • 1 sheet of ready-rolled puff pastry (approx. 320g / 11 oz), thawed if frozen
  • 1 egg, beaten (for egg wash)
  • Optional: sesame seeds or nigella seeds for topping

🍳 Instructions

1. Prepare the Filling

  1. Heat olive oil in a pan over medium heat.
  2. Add the chopped onion and sauté until soft and translucent (about 4-5 minutes).
  3. Add garlic and cook for another 1 minute until fragrant.
  4. Stir in the spinach and cook until wilted and most of the moisture has evaporated. If using frozen spinach, just cook until heated through.
  5. Remove from heat. Let it cool slightly, then mix in the crumbled feta, parsley, oregano, salt, and pepper.
  6. Add 1 beaten egg to help bind the mixture. Stir well. Set aside to cool completely.

2. Assemble the Crisps

  1. Preheat your oven to 200°C (390°F) fan / 220°C (430°F) conventional.
  2. Unroll the puff pastry and cut it into even squares or rectangles (about 7–8 cm wide).
  3. Place a spoonful of spinach-feta filling in the center of each square.
  4. Fold over the pastry diagonally to form triangles (or fold edges over to make rectangles).
  5. Press edges with a fork to seal.
  6. Transfer to a baking tray lined with parchment paper.

3. Bake

  1. Brush the tops with beaten egg to give them a golden finish.
  2. Sprinkle with sesame or nigella seeds if desired.
  3. Bake for 15–20 minutes or until puffed and golden brown.
