Crispy Greek Chicken Tenders


Introduction

These Crispy Greek Chicken Tenders are juicy on the inside, golden and crunchy on the outside, and bursting with the fresh, zesty flavors of Greece. Marinated in yogurt, lemon, garlic, and herbs, then coated in seasoned breadcrumbs and pan-fried (or baked!), they’re perfect for dipping in tzatziki or wrapping in pita bread with veggies. A healthier twist on traditional fried chicken tenders with a bold Mediterranean flair!


📝 Ingredients

For the Marinade:

  • 1.5 lbs (about 700g) chicken tenders (or chicken breasts sliced into strips)
  • 1 cup plain Greek yogurt
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp ground cumin
  • Salt and pepper to taste

For the Breading:

  • 1 cup panko breadcrumbs (for extra crunch)
  • ½ cup plain breadcrumbs (or crushed cornflakes)
  • 1 tsp dried parsley
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Salt and pepper, to taste

Optional for Serving:

  • Tzatziki sauce
  • Lemon wedges
  • Fresh parsley
  • Warm pita bread
  • Greek salad

🔪 Instructions & Method

Step 1: Marinate the Chicken

  1. In a large bowl, combine Greek yogurt, olive oil, lemon juice & zest, garlic, oregano, thyme, cumin, salt, and pepper.
  2. Add the chicken tenders and toss to coat well. Cover and refrigerate for at least 1 hour, or ideally overnight for maximum flavor.

Step 2: Prepare the Breading

  1. In a shallow dish or bowl, combine panko, breadcrumbs, parsley, paprika, garlic powder, salt, and pepper.
  2. Mix thoroughly and set aside.

Step 3: Bread the Chicken

  1. Remove the chicken from the marinade, letting the excess drip off.
  2. Dredge each tender in the breadcrumb mixture, pressing gently so it sticks and forms a good coating.

Step 4: Cook the Chicken

🧑‍🍳 Option 1: Pan-Fried (Extra Crispy)

  1. Heat 2–3 tbsp olive oil in a large skillet over medium-high heat.
  2. Add chicken tenders in batches, being careful not to overcrowd the pan.
  3. Cook for 3–4 minutes per side, until golden brown and cooked through (internal temp of 165°F / 74°C).
  4. Drain on paper towels.

🔥 Option 2: Baked (Healthier)

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil and lightly grease.
  2. Place breaded tenders on the sheet and lightly drizzle or spray with olive oil.
  3. Bake for 18–22 minutes, flipping halfway, until golden and crispy.
