Air Fryer Cheesy Baked Potatoes

Baked potatoes get a serious upgrade in the air fryer. This method delivers crispy skin and perfectly soft, steamy insides — in less time than the oven. Ingredients

For the Potatoes:

  • 4 medium russet potatoes, scrubbed clean
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt

For the Cheesy Filling:

  • 1 cup shredded cheddar cheese (or a cheese blend)
  • 2 tablespoons sour cream
  • 2 tablespoons butter
  • ¼ cup milk (warm)
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 tablespoons chopped chives or green onions (optional)

Instructions & Method

Step 1: Prep the Potatoes

  1. Wash and dry the potatoes thoroughly. Pierce each potato several times with a fork to allow steam to escape during cooking.
  2. Rub each potato with olive oil, then sprinkle with sea salt.

Step 2: Air Fry the Potatoes

  1. Preheat your air fryer to 400°F (200°C) for about 3 minutes.
  2. Place the potatoes in the air fryer basket (don’t overcrowd).
  3. Cook for 35–40 minutes, turning once halfway through. They’re ready when a knife easily pierces the center.

⏲️ Tip: Cooking time may vary depending on your air fryer size and potato size. Check doneness at 30 minutes.

Step 3: Make the Cheesy Filling

  1. Once the potatoes are done, carefully remove them and let cool slightly.
  2. Slice each potato open lengthwise. Scoop out the insides into a mixing bowl, leaving about ¼ inch of potato around the skin to keep it intact.
  3. To the scooped potato, add butter, sour cream, warm milk, garlic powder, and cheddar cheese. Mash until creamy. Season with salt and pepper to taste.

Step 4: Stuff and Finish

  1. Spoon the cheesy mixture back into the potato shells.
  2. Top each with a little extra cheese.
  3. Return to the air fryer at 375°F (190°C) for 5–7 minutes, or until the cheese on top is melted and bubbly.

Step 5: Garnish and Serve

  • Sprinkle with chopped chives or green onions, and add any optional toppings you like.
