Crispy Brussels Sprouts with Bacon and Creamy Mustard Sauce

Introduction:

Brussels sprouts have made a major comeback, and this recipe proves exactly why. Roasting the sprouts brings out their natural sweetness and gives them a crispy, caramelized edge. Toss in crispy bacon and drizzle with a bold, creamy mustard sauce, and you have a side dish that will outshine the main course. It’s quick to prep, easy to scale, and totally irresistible.

🛒 Ingredients:

For the Brussels Sprouts:

  • 1 ½ lbs (about 700g) Brussels sprouts, trimmed and halved
  • 4 slices thick-cut bacon, chopped
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper

For the Creamy Mustard Sauce:

  • ⅓ cup sour cream (or Greek yogurt for a lighter option)
  • 1 tbsp Dijon mustard
  • 1 tbsp whole grain mustard
  • 1 tsp honey (optional, for a touch of sweetness)
  • 1 tbsp lemon juice or apple cider vinegar
  • Salt and pepper to taste

🔪 Method:

Step 1: Preheat and Prep

  1. Preheat your oven to 425°F (220°C).
  2. Line a large baking sheet with parchment paper or foil for easy cleanup.

Step 2: Roast the Brussels Sprouts

  1. In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper.
  2. Spread them out in a single layer on the prepared baking sheet, cut side down for maximum crispiness.
  3. Sprinkle the chopped bacon evenly over the sprouts.
  4. Roast for 25–30 minutes, stirring once halfway through, until the sprouts are golden-brown and crispy on the edges and the bacon is fully cooked.

Step 3: Make the Creamy Mustard Sauce

  1. While the sprouts are roasting, combine sour cream, Dijon mustard, whole grain mustard, lemon juice (or vinegar), and honey in a small bowl.
  2. Whisk until smooth. Taste and season with salt and pepper. Set aside.

Step 4: Assemble and Serve

  1. Once the Brussels sprouts and bacon are crispy, remove them from the oven.
  2. Transfer to a serving bowl or platter.
  3. Drizzle with the creamy mustard sauce or serve it on the side for dipping.

👩‍🍳 Tips & Variations:

  • Add chopped toasted pecans or walnuts for crunch.
  • A sprinkle of Parmesan or crumbled blue cheese takes it up a notch.
  • To make it vegetarian, skip the bacon and add smoked paprika for a similar smoky depth.
