Easy Butter Chicken Plate


With Fragrant Rice and Golden Potatoes

🐓 Butter Chicken (Quick Version)

Ingredients:

  • 500g (1 lb) boneless chicken thighs or breast, cut into bite-sized pieces
  • 1 tbsp oil or butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ginger, grated
  • 1.5 tsp garam masala
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder (optional, for heat)
  • 200ml (3/4 cup) tomato puree or crushed tomatoes
  • 150ml (1/2 cup) heavy cream or coconut cream
  • Salt to taste
  • Fresh cilantro (for garnish)

Instructions:

  1. Marinate (optional but better): Mix chicken with 1/2 tsp garam masala, a pinch of salt, and 2 tbsp yogurt. Let sit for 15-30 mins.
  2. Cook: In a large skillet, heat oil/butter over medium heat. Sauté onion until golden, then add garlic and ginger.
  3. Add spices and cook for 30 seconds until fragrant.
  4. Add chicken and sear until lightly browned.
  5. Add tomato puree, reduce heat, and simmer for 10 minutes.
  6. Stir in cream, simmer 5 more minutes. Season with salt.
  7. Garnish with chopped cilantro.

🍚 Fragrant Rice

Ingredients:

  • 1 cup basmati rice
  • 2 cups water
  • 1 small cinnamon stick (or 1/2 tsp ground cinnamon)
  • 2 cardamom pods (optional)
  • 1 tsp salt
  • 1 tsp oil or butter

Instructions:

  1. Rinse rice until water runs clear.
  2. In a pot, heat oil/butter, lightly toast spices for 1 min.
  3. Add rice and stir to coat.
  4. Add water and salt, bring to a boil.
  5. Cover, reduce heat, and simmer for 12 minutes.
  6. Let sit covered for 5 mins before fluffing.

🥔 Golden Potatoes (Pan-Roasted)

Ingredients:

  • 2 medium potatoes, peeled and cubed
  • 1 tbsp oil
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • Salt & pepper to taste

Instructions:

  1. Parboil potatoes for 5-7 minutes until just tender. Drain.
  2. Heat oil in a pan, add turmeric and cumin.
  3. Add potatoes and pan-fry until golden and crispy.
  4. Season with salt and pepper.

🧆 Serving Suggestion:

  • Plate the fragrant rice as a base.
  • Spoon butter chicken over part of the rice.
  • Add a side of golden potatoes.
  • Garnish with fresh cilantro, a squeeze of lemon, and a drizzle of yogurt (optional).
