Instructions & Method

1. Prepare the Avocado

  • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  • Mash it thoroughly with a fork or blend in a food processor until smooth and creamy. Set aside.

2. Melt the Chocolate

  • Place the chopped dark chocolate in a heatproof bowl.
  • Use a double boiler (or place the bowl over a pot of gently simmering water) to melt the chocolate slowly, stirring until smooth.
    Tip: Avoid letting any water touch the chocolate to prevent seizing.

3. Combine Ingredients

  • Remove the melted chocolate from the heat.
  • Stir in the mashed avocado, vanilla extract, and a pinch of sea salt.
  • Mix thoroughly until the mixture is smooth and fully combined.
    It should resemble a thick ganache.

4. Chill the Mixture

  • Cover the bowl and refrigerate for at least 1 hour, or until the mixture is firm enough to roll.

5. Shape the Truffles

  • Once chilled, use a small cookie scoop or spoon to scoop out about a tablespoon of the mixture.
  • Roll it between your palms to form smooth balls.
  • Place the truffles on a parchment-lined tray.

6. Coat the Truffles

  • Roll each truffle in your preferred coating (cocoa powder, nuts, coconut, etc.) to finish.
  • Store in the refrigerator for up to 5 days.
