Ingredients
For the Filling:
- 1 cup fresh spinach (or ½ cup frozen spinach, thawed and drained)
- 1 cup ricotta cheese
- ¼ cup grated Parmesan cheese
- 1 large egg
- 1 garlic clove, minced
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp ground nutmeg (optional)
- Zest of ½ lemon (optional, for freshness)

- 1 sheet puff pastry, thawed
- 1 egg (for egg wash)

Step 1: Prepare the Filling
- Cook the Spinach
If using fresh spinach, sauté in a pan over medium heat until wilted (2-3 minutes), then let it cool and finely chop. If using frozen, make sure it’s thawed and well-drained to remove excess moisture. - Mix the Filling
In a mixing bowl, combine the chopped spinach, ricotta, Parmesan, minced garlic, egg, salt, pepper, nutmeg (if using), and lemon zest. Mix until well incorporated. Set aside.
Step 2: Prepare the Pastry
- Roll Out the Puff Pastry
On a lightly floured surface, roll out the puff pastry sheet to smooth the creases and slightly thin it out. Cut it into 12 equal squares (about 2.5–3 inches each). - Fill and Fold
Place a heaping teaspoon of the spinach-ricotta filling into the center of each square.
Fold each square into a triangle or bring all four corners to the center and pinch together to seal, depending on the shape you prefer. - Egg Wash
Beat the second egg and brush over the tops of the bites. Optionally, sprinkle with sesame or poppy seeds.
Step 3: Bake
- Preheat and Bake
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the bites with some space between each.
