Ingredients
For the Filling:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 250g (about 9 oz) frozen spinach, thawed and well-drained
- 150g (about 5 oz) feta cheese, crumbled
- 50g (about 2 oz) ricotta or cream cheese (optional for creaminess)
- 1 egg (lightly beaten, reserve a little for brushing)
- Salt and black pepper, to taste
- 1 teaspoon dried oregano or dill (optional)
- A pinch of nutmeg (optional)
For the Pastry:
- 1 sheet puff pastry (store-bought or homemade), thawed if frozen
- 1 egg yolk mixed with 1 tablespoon of milk (for egg wash)
- Sesame seeds or nigella seeds (optional, for topping)
Instructions / Method
Step 1: Prepare the Filling
- Heat olive oil in a skillet over medium heat.
- Add the chopped onion and sauté until soft and translucent (about 3–4 minutes).
- Stir in the minced garlic and cook for another 30 seconds.
- Add the drained spinach and cook for 2–3 minutes, stirring to remove any excess moisture.
- Remove from heat and let cool slightly.
- In a large bowl, combine the spinach mixture, crumbled feta, ricotta (if using), beaten egg, herbs, salt, pepper, and nutmeg. Mix until well combined.
Step 2: Prepare the Pastry
- Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
- Roll out the puff pastry on a lightly floured surface. Cut it into equal squares (about 4–5 inches each).
- Place a spoonful of the spinach and feta mixture in the center of each square.
