Spinach & Feta Puff Pastry Triangles


Introduction

Crispy, golden puff pastry filled with a creamy and savory mix of spinach, feta cheese, and herbs — these Spinach & Feta Puff Pastry Triangles are a timeless favorite. Inspired by the classic Greek spanakopita, they’re simple to prepare, freezer-friendly, and guaranteed to impress at any gathering. Whether served warm from the oven or at room temperature, each bite offers a flaky, buttery crunch with a melt-in-your-mouth filling.


Ingredients

For the Filling:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 250g (about 9 oz) frozen spinach, thawed and well-drained
  • 150g (about 5 oz) feta cheese, crumbled
  • 50g (about 2 oz) ricotta or cream cheese (optional for creaminess)
  • 1 egg (lightly beaten, reserve a little for brushing)
  • Salt and black pepper, to taste
  • 1 teaspoon dried oregano or dill (optional)
  • A pinch of nutmeg (optional)

For the Pastry:

  • 1 sheet puff pastry (store-bought or homemade), thawed if frozen
  • 1 egg yolk mixed with 1 tablespoon of milk (for egg wash)
  • Sesame seeds or nigella seeds (optional, for topping)

Instructions / Method

Step 1: Prepare the Filling

  1. Heat olive oil in a skillet over medium heat.
  2. Add the chopped onion and sauté until soft and translucent (about 3–4 minutes).
  3. Stir in the minced garlic and cook for another 30 seconds.
  4. Add the drained spinach and cook for 2–3 minutes, stirring to remove any excess moisture.
  5. Remove from heat and let cool slightly.
  6. In a large bowl, combine the spinach mixture, crumbled feta, ricotta (if using), beaten egg, herbs, salt, pepper, and nutmeg. Mix until well combined.

Step 2: Prepare the Pastry

  1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface. Cut it into equal squares (about 4–5 inches each).
  3. Place a spoonful of the spinach and feta mixture in the center of each square.
  4. Fold each square diagonally to form a triangle, pressing the edges firmly with a fork to seal.

Step 3: Brush and Bake

  1. Place the triangles on the prepared tray.
  2. Brush the tops with the egg wash.
  3. Sprinkle with sesame or nigella seeds if desired.
  4. Bake for 18–22 minutes, or until puffed and golden brown.

Step 4: Serve

  • Allow to cool for a few minutes before serving.
  • Enjoy warm or at room temperature with a dollop of yogurt, tzatziki, or a light salad on the side.

Tips & Variations

  • You can substitute spinach with kale, chard, or even finely chopped broccoli.
  • For a vegan version, use dairy-free puff pastry and tofu or vegan feta.
  • These freeze beautifully! Assemble and freeze before baking, then bake directly from frozen — just add a few extra minutes to the cooking time.
