Ingredients
For the Meatballs:
- 1 lb (450 g) ground beef (or half beef, half pork for extra flavor)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 large egg
- 2 tbsp milk
- 1 tbsp Worcestershire sauce
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp chili flakes (optional, for a little heat)
- 12–15 small mozzarella cubes (or any melty cheese of choice)
For the Sweet Glaze:
- 1/3 cup ketchup
- 3 tbsp brown sugar
- 2 tbsp honey or maple syrup
- 1 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1/4 tsp garlic powder
Instructions & Method
Step 1: Preheat & Prepare
- Preheat your oven to 400°F (200°C).
- Line a baking tray with parchment paper or lightly grease it.
Step 2: Make the Meatball Mixture
- In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan, onion, garlic, egg, milk, Worcestershire sauce, oregano, salt, pepper, and chili flakes.
- Mix gently using your hands or a spatula until everything is just combined — don’t overmix, or the meatballs may turn out tough.
Step 3: Stuff with Cheese
- Take about 2 tablespoons of the meat mixture and flatten it slightly in your palm.
- Place one cube of cheese in the center, then wrap the meat around it, sealing it completely.
- Roll gently into a smooth ball.
- Repeat until all the mixture and cheese are used.
Step 4: Bake the Meatballs
- Place the meatballs on the prepared baking tray.
- Bake for 15–18 minutes, or until browned and cooked through.
Step 5: Prepare the Sweet Glaze
- While the meatballs bake, combine all glaze ingredients in a small saucepan over medium heat.
- Stir well and simmer for 4–5 minutes, until the glaze thickens slightly and becomes shiny.
Step 6: Coat the Meatballs
- Once baked, transfer the meatballs to a skillet or bowl.
- Pour the warm glaze over them and toss until all are evenly coated.
- Optionally, return them to the oven for 5 minutes to caramelize the glaze slightly.
Serving Suggestions
- Serve hot with toothpicks as party appetizers.
- Spoon over buttered noodles, mashed potatoes, or rice for a hearty meal.
- Garnish with fresh parsley or chopped chives for color.
Chef’s Tip
- Try stuffing with cheddar, gouda, or pepper jack for flavor variations.
- For a smoky kick, add a splash of barbecue sauce to the glaze.
