Grilled Chicken & Avocado Salad

Ingredients

Instructions

1. Marinate the Chicken

  1. In a small bowl, mix olive oil, lemon juice, minced garlic, paprika, oregano, salt, and pepper.
  2. Add the chicken breasts and coat them well.
  3. Let marinate for 20–30 minutes (or up to 4 hours in the fridge).

2. Grill the Chicken

  1. Heat a grill or grill pan to medium-high heat.
  2. Cook chicken for 5–6 minutes per side, or until fully cooked (internal temperature 165°F / 74°C).
  3. Let it rest for 5 minutes, then slice into strips.

3. Prepare the Salad

  1. Place mixed greens in a large bowl.
  2. Add cherry tomatoes, cucumber, red onion, and avocado slices.
  3. Add feta cheese if using.

4. Make the Dressing

  1. Whisk olive oil, lemon juice, Dijon mustard, honey, salt, and pepper together until smooth.
