Ingredients (Serves 2–4)
For the Flatbread
- 1 store-bought flatbread or naan (or 1 ball of pizza dough, rolled thin)
- 1–2 ripe pears, thinly sliced
- 1 tbsp unsalted butter
- 1 tbsp brown sugar (or honey)
- 1 small wheel or wedge Brie cheese (4–6 oz), rind on or off, sliced
- ¼ cup walnuts, roughly chopped
- 1–2 tsp fresh thyme leaves (optional)
- 1–2 tbsp honey, for drizzling
- 1 tbsp olive oil
- Pinch of flaky sea salt
- Freshly cracked black pepper
Instructions
1. Toast the Walnuts
- Preheat the oven to 400°F (200°C).
- Spread the walnuts on a small baking sheet.
- Toast for 5–7 minutes, or until fragrant. Set aside.
2. Caramelize the Pears
- Heat the butter in a skillet over medium heat.
- Add the pear slices and sprinkle with brown sugar.
- Cook for 5–8 minutes, turning occasionally, until the pears are soft, lightly golden, and caramelized.
- Remove from heat and let cool slightly.
3. Assemble the Flatbread
- Brush the flatbread lightly with olive oil.
- Arrange slices of Brie evenly over the surface.
- Layer the caramelized pears on top.
- Scatter toasted walnuts over the flatbread.
- Sprinkle with thyme leaves (if using).
- Season with a small pinch of flaky sea salt and black pepper.
4. Bake
- Place the assembled flatbread directly on the oven rack or on a baking sheet.
- Bake for 8–12 minutes, or until the Brie is melted and the edges are crisp and golden.
5. Finish & Serve
- Drizzle with honey while warm.
- Slice and serve immediately.
