Creamy Garlic Butter Chicken & Linguine in Alfredo Sauce


Introduction

It’s rich, flavorful, and perfect for a family dinner or a special weekend meal. Best of all, it comes together in about 30–40 minutes using simple ingredients.


Ingredients

For the Chicken

  • 2 large chicken breasts, sliced in half lengthwise
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons butter
  • 1 tablespoon olive oil

For the Pasta

  • 250 g (8 oz) linguine
  • Water (for boiling)
  • 1 teaspoon salt

For the Alfredo Sauce

  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1½ cups heavy cream
  • 1 cup grated Parmesan cheese
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • Optional: a pinch of nutmeg

Optional Garnish

  • Chopped parsley
  • Extra Parmesan cheese

Methods Used

  • Pan-searing – to cook the chicken until golden and juicy
  • Boiling – to cook the linguine until al dente
  • Simmering – to gently thicken the Alfredo sauce
  • Tossing – to evenly coat pasta in sauce

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of water to a boil.
  2. Add salt and linguine.
  3. Cook according to package instructions until al dente.
  4. Drain and set aside (save ½ cup of pasta water).

Step 2: Cook the Chicken

  1. Season chicken with salt, pepper, and Italian seasoning.
  2. Heat olive oil and butter in a large pan over medium heat.
  3. Add chicken and cook for 5–6 minutes per side until golden and fully cooked.
  4. Remove chicken from the pan and set aside.

Step 3: Make the Garlic Alfredo Sauce

  1. In the same pan, melt butter over medium heat.
  2. Add minced garlic and cook for about 30 seconds (do not brown).
  3. Pour in the heavy cream and gently simmer for 3–4 minutes.
  4. Stir in Parmesan cheese, black pepper, garlic powder, and nutmeg (if using).
  5. Stir until the sauce thickens and becomes smooth.

Step 4: Combine Everything

  1. Add cooked linguine to the sauce and toss well.
  2. Slice the chicken and return it to the pan.
  3. If the sauce is too thick, add a little reserved pasta water.
  4. Simmer everything together for 2 minutes.

To Serve

  • Garnish with chopped parsley and extra Parmesan.
  • Serve hot with garlic bread or a fresh salad.
